We are an artisanal food producer. This means high-quality, distinctive products made in small quantities, usually by hand or using traditional methods. Nothing is regenerated or reheated from a pre-cooked condition. All foods are made onsite from complete raw materials (except cheese, cheese is our cheat).
Our suppliers pride themselves on being one of only a select few value chains that can claim true farm-to-butcher status. That means the meat comes from their livestock, precision-reared on their family owned farm, the natural way, using sustainable farming practices.
Where possible we make informed decisions and suggestions to our clients and only consume fish from the alternative fish SASSI green list and where possible avoid fish from the orange list. As part of our food philosophy, we avoid all fish and seafood from the current red list and update constantly to identify new red fish/seafood listings.

NICOLA JANE GIBBERD – If I had to describe myself in three words these would be: attentive, enthusiastic and vibrant. I completed my degree in hospitality management at the Cape Town Hotel School and attended the SA School of Weddings. Working in some of South Africa’s most famous and luxurious hotels, as well as abroad in the United Kingdom, I gained invaluable experience and contacts. Establishing Nicola Jane in 2011 has given me the opportunity to do what I enjoy most: creating beautiful moments and memories.
SHELLEY THERON – If I had to describe myself in three words it would be: organised, approachable and enthusiastic. I completed my degree in Events & Project Management at the Cape Peninsula University of Technology. I completed my internship at Nicola Jane Weddings in 2014. Working with people, and the reward that comes with this exciting industry is what sparked my interest in my career in wedding planning. I have since been a part of the Nicola Jane Weddings team.
Basically, I love weddings! I actually have a wedding file (which has now been taken over by my Pinterest board) which I have created for my future Legendary Wedding Day… some may find that weird, however, I want my wedding day to be perfect, just as much as you do. I have loved weddings all my life, they are just so romantic and as clichéd as it may sound, it is the first day of the rest of your life, and what a day it will be!
I am a 32-year-old born and bred Capetonian. I started out in the wedding industry as a Professional Wedding Photographer in 2008. With each wedding that I photographed, I realized how much I loved being a part of my bride and groom’s special day, (I also realized how many brides were in way over their heads and completely stressed out) and slowly but surely, I made my move into becoming a Professional Wedding Planner. I have been the proud owner of The Mosaic Wedding Company since 2011 and have planned many weddings since opening.
